If your wife is a joint holder to that account you cannot take her name the account. You would signed a contract that was legally binding. And if you are an authorized user, then you can be removed. In fact you don't legally even have to pay the debit. And if you want to take someone's name contact with the concerned credit card provider and gather the deep details about this.....

If you added her as a authorized user all you have to do is call the credit card companies and they will remove her from the accounts, but this will not really help her credit that much because the accounts will still show with the poor pay history the only thing that will change is on her credit they will show as closed by credit granter with a $0 balance.

If on the other hand you added her as a joint signer then you will have to close the accounts and open new ones to remove her name from the accounts.
